Momma's Mondo Meatball

Here's SPIN!'s Mondo meatball. Yummo! 

I spent the weekend in KC this month & went to a restaurant nearby [SPIN! Pizza] twice to get this "Mondo Meatball" dinner. I was so inspired. It was first of all, delicious. Second of all, a new way to serve it. Third of all, I love BEEF & want more meat than pasta. So good. Leave the pasta off! Gimme the meatball & flatbread! Well this week I made it  - the BIG meatball & a homemade focaccia. It was a hit! (mostly, but I'm not going off 7 & 8 year olds. They have to eat what we give them) I just made my meatballs bigger than normal & plated a tad fancy. My own spin... I used a polenta cake for the starchy base & topped with fresh mozzarella & basil chiffonades. 

The star. Look at these beauties. They make exquisite meatball sandwiches later in the week.

Meatball Recipe:
1.5 lbs Ground Beef
1 lb Italian Sausage
2 Eggs
1/2 C Italian breadcrumbs (progresso)
Garlic powder (big shake/dump in)
Onion powder (same big shake/dump in)
1/3 C finely grated parmesan or pecorino romano cheese
Handfull of fresh parsley chopped
Handfull of fresh basil chopped
Salt (kosher) & Pepper

Mix well. I basically knead the meat. Punching, folding it all together until it's fully incorporated, but without over mixing. 

Roll big balls. Bigger than a golf ball, smaller than a baseball. Add it to your sauce & simmer for at least 3+ hrs. My sauce recipe will have to come later. For now, use yours or a quality jar. White linen from Costco is the most fantastic.  

Next up, Polenta cakes... I sliced a tube of polenta & browned them in olive oil. Then voila. You see the rest right? I'll get you the focaccia step by step, but I need to practice & get it right. Can't wait to share it!
