Momma's Donuts!
This week I ordered a donut pan on amazon & have been trying out donut recipes. That's not the worst thing in the world, right? Well, I've honed in on a recipe worth sharing. We're going nuts over this one. I have adapted our most favorite waffle recipe into a donut. (That will also become your go-to waffle recipe. Save that!)
Bottom line - LOTS of butter & folded in beaten egg whites for airy-ness. I'm thinking, "this should TOTALLY work as a donut." BAM! IT DOES!
Ingredients: 1 1/3 cups flour 4 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons honey 2 eggs, separated 1/2 cup butter, melted 1 3/4 cups milk
INSTRUCTIONS:
In a large mixing bowl, whisk together all dry ingredients.
Melt the butter & honey together (this is my friend Kylie's INCREDIBLE honey!) I took this trick from Alton Brown's instant pancake recipe. I always go for melting local honey in good butter instead of using sugar & oil.
Separate the eggs, adding the yolks to the butter & honey mixture, placing the whites in a small mixing bowl.
Beat whites until moderately stiff & set aside.
Add milk & butter mixture to dry ingredient mixture and blend.
Fold stiff egg whites into mixture.
Ladle mixture into a baggie & pipe it into the donut pan..
Bake for 7-9 minutes at 425. Cool on a rack, frost & decorate. Eat. Enjoy. Share with friends.
